About Chuan Chinese Bistro

Chuan Chinese Bistro is a New Style Szechuan-rooted kitchen in Mechanicsville, cooking hand-folded dim sum, wok classics and noodle bowls to order. Every plate rests on fresh produce, house-mixed sauces and the heat of a real wok.

Course 1

Handmade Dim Sum & Dumplings

Our dim sum counter opens the meal properly: soup dumplings and crystal shrimp dumplings pleated by hand, pork or vegetable potstickers crisped in the pan, scallion bubble pancake, salted edamame and sweet baby ribs. Small plates made for sharing while the wok warms up.

Szechuan Wok & Chef's Specialties

This is where the kitchen shows its hand. Mala stone pots, spicy dry pots, water-boiled fish and beef, cumin lamb, Chongqing dry chili chicken, twice-cooked pork. Chili, peppercorn and garlic are layered rather than dumped, so the heat always arrives with fragrance behind it.

Noodles & Fried Rice

Solid bowls and plates for any hour. Braised beef noodle soup, Szechuan dandan noodles, grandma's chili-oil noodles, Singapore curry rice noodles, beef chow fun, plus fried rice and lo mein in seven versions, from plain to full combination.

Serious Szechuan Cooking

Nothing here waits under a heat lamp. Vegetables are cut the same day, fish is filleted in-house, and sauces are mixed from whole spices instead of jars — which is why our hot and sour soup tastes clean and our mapo tofu tastes of peppercorn rather than salt. Dishes leave the pass the moment they finish, so the greens still snap and the salt and pepper shrimp still crackles. Order the same plate twice and it should taste the same both times.

Fillets, jumbo shrimp and scallops handled with a light touch — garlic and leek, black pepper on a sizzling iron plate, green peppercorn in a stone pot, or the long-simmered chili broth of Szechuan water-boiled fish. Bright, tender, and never cooked a second too long.

Tofu & Garden Vegetables

Mapo tofu in three versions, tofu with green pepper, eggplant and basil in a clay pot, dry-fried green beans, and simply stir-fried bok choy or Chinese broccoli. Proof that the vegetable half of the menu is never an afterthought.

Soup dumplings, crystal shrimp dumplings and potstickers are pleated in our kitchen, thin-skinned and full of juice, then steamed or pan-fried only after you order.
